After working in the same kitchen in Michael’s native Switzerland, Michael and Laura fell in love, moved to NYC and married. Michael has worked in a variety of settings ranging from New York City’s 4-star Lespinasse to upcountry comfort food at the award winning Lodge at Koele in Lanaii, Hawaii.
The decision to raise their family in Vermont lured them away from Michael’s position as Chef de Cuisine at the St. Regis Hotel in Manhattan, & to the eventual opening of award winning Michael’s on the Hill Restaurant, in Waterbury Center in 2002. Michael was awarded Vermont’s first “Chef of the Year” & recognized as one of the country’s top culinary talents in Best Chefs America, the first peer review guide of U.S. chefs. He has been a guest chef to locations spanning from Disney to the Caribbean, Australia & Indonesia.
Laura received a degree in Restaurant Management from Syracuse University then continued her education at The Culinary Institute of America. She has worked as a chef and manager in hotels & restaurants in Switzerland, New York City, Hawaii and Vermont.
Both passionate about sustainability and buying local, Idletyme Brewing Company is a member of the Vermont Fresh Network, Farm Plate, Slow Food & Local First Vermont.
Michael and Laura were previously awarded “Restauranteurs of the Year”, and it was a true honor, but, in this business it takes a very large village, and nothing can be accomplished without a fantastic management team and staff. They are grateful to them all for making it happen every day.
